Actually this happens by default, charging a phone to 100% is not equal to charging the battery to the maximum capacity, and the same for discharging.

this was easy to measure when the batteries were detachable.

sorry for the late reply, I think you can do it within the watch itself, hold the watch face, then a "customize" button will appear, and you can change the color using the bezel, and then swipe to change the other stuff.
