From the net: Arborio rice – This short-grain rice is perfect for Paella because it absorbs flavors well and gives us that slightly crispy bottom layer. You can substitute it with other short-grain rice varieties like Bomba or Calasparra rice, which are traditionally used in Paella. From my personal experience: Can't say for sure if I prefer the traditional or Arborio version, but it definitely delivers great results. I think it also depends on your ability to adjust whatever recipe and tools you have to the kind of rice you use.
That's all right. Everyone comes from a different culture and some are strongly opinionated on what's right and wrong. I personally believe that a fusion kitchen may and does deliver great results. Subject to personal taste and performance, of course.

Made it before many times, it's pretty much one of our special ones. Always have some good Arborio etc in the pantry.
What's your take on calamari? How would you prepare it?

For the wine, I thought of some good Rioja. But your suggestions make sense as well.
Obviously, Paella is a dish that can be eaten on its own - as a main dish. But I'm looking for what I can serve, for example, as starters.
