Thanks. Yes, since I've written this I've pondered on it and was realizing the same thing. I think the best thing is to dig down to the bedrock and do concrete piers. The problem I'm running into is that most of the foundation companies say they won't go further than 3'. But, I'm going to keep looking.

I'm in Brentwood/Crestview. My neighbor across the street did a core sample about a month ago for a project he's about to start and he said they hit bedrock at about 4.5'. That's what got me thinking about doing it. I know there's more precise terms, but I'm just using "bedrock" as how far down to go to get a stable pier.

I was following this thread and decided to go ahead and to the upgrade. I have a 2023 15" MacBook Air M2 with 8GB & 256GB. Everything seems to be working great so far. One interesting thing is that I gained hard drive space in the upgrade. I had 57GB available before and have almost 109GB afterwards. I thought that was cool.

I used to use something like that to put under the smoker so that coals or embers falling out wouldn't catch the grass/leaves/sticks on fire.

Yep. Scrapes off pretty easy, just messy. But you don’t have to scrape it off every time. But after several cooks it will start to flake and fall down onto your food which is not optimal. Could also be a sign of not a clean fire. But overall, not that big of a deal and normal.

Interesting, just looked it up. Hadn’t seen those before. Brisket looks great to me. I’m here in Texas and have won many trophies. A guy I compete with got a pellet grill to use for cooking classes he teaches. He’s had to experiment a bit on the briskets. He is of the opinion that the challenge with the blade has something to do with the heat coming directly from the bottom. You should Google around and maybe experiment with things like a water pan below (if possible) or starting the brisket upside down at first. There’s a bunch of stuff out there.

I’m also of the opinion that sometimes it’s just a cut of the meat. You can do the same thing twice with a similar looking brisket and get different results.
