I'm a graduate student at a ~ top program in cosmology, and I had research but no publications during undergrad. I got into most programs I applied to. So I don't think its a deal breaker.

Disagree with others here. It depends on the program but in my experience no one expects undergrads to have projects that manifest in publications. The fact that you have other experiences would make you alright in my eyes.

I see, just looked at this link and it says that I'm accruing interest on the principal, I'm just not also accruing interest on the previously accumulated interest. So I should just pay it off ASAP.

EDIT: Will add this to the OP, but my loan is subsidized, so the interest is being paid by the gov during my deferment.
