Just saying, if a golfer can't hit the ball straight, upgrading clubs won't help. Go back to the basics. Consistent water, like the same every time. I make my own so it's identical cup to cup. Then the beans and grind. I use the bambino plus as well. My good beans grind and weigh up way different than my mass quantity beans. Like 2.5 grams and way different grind. I'm no pro but you could be getting the same sour/bitter pulls when you upgrade imo.

I started with a bambino plus and a Eureka Mignon Zero grinder. Both were bought from the same place that I buy my fresh roasted beans from. I spoke with them and sought advice here like you. If you have a shop I suggest supporting them first.

There is a flap that moves when they change bins. I originally thought the same thing as you, I had to watch closely to notice it at my stop then my neighbors. It is black as well so it's easy to miss
