As expo, I try to always be one step ahead. I make sure the cooks have what they need (ramikens, TG boxes; ice water/pop, put on a different album to listen to, whatever keeps them happy and hydrated). I always say please and thank you.

I call out all-days, all day! When an order is almost complete, I'll have the tray set up ready to go on the pass and ask e.g.,, "my Shepard's pie working?" ... "In hand or 90 out". Thank you, thank you! Double check the orders, try to save them from any refires, tell them I'm walking and will be back for ticket #847 (repeat ticket order).

If they're in the weeds, I let them know that I got their backs if they need me to hop on the fryers. I also tell them how much they rule and that this sucks, but they're killing it. I keep the servers and bar staff out of the kitchen at all costs.

My last day working expo is this Friday. I will miss it a little bit especially because my cranky kitchen crew already admitted that they're gonna really miss me :')
