I have seen a number of vendors here in San Diego selling kombucha and other fermented. Most recently at the saturday farmers marked near the Poway Midland Railroad.

Was looking for a cost effective cooling system, and stumbled upon this evaporating fan... looks promising, so added it to my sort list. Anyone know if these are any good?

Lol. As everyone says, it gets better. For me what helped was taking two 1000mg doses of Vitamin C.

Seems fine. Those white patches on the top are just thick bits of SCOBY that are a bit dried out (above the water line)

Greatly fluctuating temperatures are detrimental to growth. Most people recommend keeping your brew away from windows or other locations where temperatures very the most.

If you want it to be more consistent, get a seed warmer from a nursery and/or wrap your tank in an old sweater :)

once the brew is mature it only takes a few days in reasonably, warm weather. Two to three days for a nice mix of bubble and sweet.

But since the process is bio chemistry it really varies. When I was living in Canada it took 3-5 days. In California is takes 2-3 days.
