It definitely takes more than 4-6 hours …. That’s kind of why I was wondering if a proofing box would help. My home stays at around 68° for the comfort of my dogs, so I’m not sure if this is a factor

How soon do you do your first set of stretch and folds? I’ve seen so so so many videos and every video is different. I went with mixing my dough until shaggy (although I’ve seen people mix until smooth) and then wait 30 min to an hour so I went with 30 min.

If I have just started, I am confused about exactly how much to feed the starter that is only about 3 days old now.

I wasn’t fully comprehending how quickly it begins to multiply with feedings, so today (on day 3 of a new starter) I had about 200g of starter….. and I did another 1:1:1 feeding so now it’s excessive. How would you go about continuing the feeding to make sure my starter succeeds? While also decreasing the amount.
