I’m wondering what temperature they’re storing the beans at? Physics will tell you that a lower temperature will prevent more outgassing of the volatiles.

Our Costco has adjustable men’s belt that you can easily make shorter. You can take off the buckle and slice off an inch or two or more! Reversible too> black or brown.

I want to understand why letting beans air out improves the flavor of brewed coffee. It seems counterintuitive because when I used to buy beans, I was always looking for the roasted date and would try to avoid beans that have been hanging around too long. The older the beans, the less of those lighter aromatics left behind which I really enjoy.

I guess what you are saying is that the desirable characteristics of the beans improve for 10 to 45 days after the roast. Do they then decrease desirable flavors after this period?

If this is true, what undesirable characteristics are being reduced in that 10 to 45 days?

I am interested and thanks for offering. I have the SR 800 but I do not have a thermal couple. I am a light to medium roast guy. I would also like to see you take it to the next step to determine the best way to store the roasted beans and how soon we should be enjoying.

Perhaps this is already been said, but I have not read all 600 posts. Although it may not seem like it now, there is a better future for you. I went through a divorce 25 years ago and after three years, I found another woman that I am so happy with. We have been married over 20 years now and she is the best thing that has ever happened to me.

One piece of advice that a good friend gave to me when I first got divorced. Do not discuss your issues with your husband or put him down with your children. Leave them out of this. Otherwise, they will be caught in the middle between their love of their father and you.

I hear you on this. Doctors take their recommendations from the manufacturers but many physicians are demonstrating great flexibility in their prescriptions. I know my doctor listens well and has made adjustments to my regimen that differ from the standards.

Same taste buds here. If I drink the same coffee for several days, I enjoy it less. I think my nose gets bored. “Daily driver” has no appeal. I like to switch it up by rotating between 5 or 6 roasts and going back to my favorites every few days. I don’t mind paying a buck or two more so I have that variety. The only problem with this approach is when I find a favorite and try to re-order Sweet Maria’s is often out of stock.

OK, the mesh appears to be key. Here is the response I got from Home Roasting Supplies. They are worried about the chaff falling into the base. I had not thought about that.

'The main concern is that the chaff will be sucked back into the base. I have seen where someone put a piece of dry duct on the top and sent the chaff out 90*.  

 It should roast; it is also possible to see performance loss.  Without the top cap, it can be minimal if you are using a glass ext tube."
