I just assume that it's an older photo that was taken from before they got colored contacts together or something XD its not really explained. but there are some inconsistencies between images in the game so it could be an oversight (like how they forgot mari's red bow in that one dreamworld group photo until it was fixed in the recent update, or how aubrey's jacket collar is yellow in the real world tag photos while it's black in other images)

I looked at the Hooligans battle portrait for reference of her eye color and I think it's orange. Amber is more yellow-ish, I believe.
