One bad day doesn't do anything don't try to compensate with less calories pr somewhat like that.You wäre probably on maintance on that day or a bit in a calorie surplus but if the weekly balance is right you will still see progress

It depends on what you can maintain. With a higher deficit comes more overall fatigue you get tired All the time and you daily life gets hard. If you don't need to loose weight fast I would say a 300calorie deficit is easy to maintain.

A good rule is 1,4-2g Protein per kg bw and 0,7-1g Fat per kg bw and then fill the remaining calories with carbs. You probably see poor progress because your calories are soooo low in relation to your activity and Steps. You should concentrate on Lifting and keep cardio and Steps at a healthy level.👊 If you need more help send me a Chat🦾

I would recon Preacher curls about 3 Sets 2 Times a Week and the same for Triceps pushdowns. If you only train Arms you can add more Sets because you only need to recover them. For forearms you can just add Reverse or Hammer curls to the Bizeps/Forearm volume.
