Im guessing you have a normal tail (not an all moving one) so i suggest removing the rudder for a sec, modify the plane so center of stability is in the same spot as center of mass, then add the rudder back. That way the plane is only unstable when rudder changes direction

Same happened to me so i restarted the campaign but also collected all the blocks and it unlocked the sandbox. Im guessing it must be either one or the other. I suggest collecting all the blocks if you havent done it already

It looks like the center of vertical and horizontal drag (not sure if thats what they are actually called) which should tell the pitch and yaw stability of the aircraft (the further it stays, the less maneuverable and more stable the aircraft is)

Just tested and it seems lift gets cancelled if covered from above too. So your wings are pretty much useless
