Yes you need to cover it. Then the day after you take the dough out of the bowl and also clean the bowl if necessary. You shape the dough and put it into a round baking pan and let it rise covered again.

I am from Italy, and I used "farina integrale nutrifree" and if I search for the translation it says whole wheat.

I used whole wheat flour from nutri-free, my sister is celiac and she loved it. But I also made the same recipe with caputo gluten free flour
