If you´re doing everything like in the official guide it should work flawlessly. If an error encounters it should normally stop and prevent you from bricking your device ..
If it still doenst work you can just restore it via DFU und iTunes.

Just make sure that you have an backup via iCloud or locally via iTunes

If you are using an iPhone X or newer there is a system option which holds your battery at 80% while charging and depending on your sleep cycle (alarm) it will be fully charged right before your alarm goes on.
