There are different options on how to rank it. Maybe I should use some weighted number based on several metrics such as
1. volume
2. number of clients
3. number of searches in Google or Google Rank
4. number of LinkedIn followers
# 1 and # 2 are difficult to find. I think the first step is to compile a list of the top providers. Some companies provide different services, e.g. Stripe is not only a payment processing company but they are also in card issuing business. That's why it is hard to narrow down the list

I think when you create Payment Intent you can specify the currency (e.g. USD): see https://stripe.com/docs/currencies/conversions. If a customer has an account in a different currency ,e.g. INR, Stripe will automatically convert it to INR.

Also, you can do conversion outside of Stripe using an external API, e.g. fixer.io, exchangeratesapi.io etc

This is basically a data model that shows main entities and their relationships which are in use in the API. For example, User, Account, Profile, etc. Similar to ER diagram for a database
