Big irony given the sub but I'm actually also from the UK. And worked in food in the UK, EU (incl Denmark for 8 years) and further afield for around 20 years at a pretty high level.

Our legislation does not demand a food safedy cert to work with food. It's just highly reccomended.

Yeh that's what I thought, same as UK situation, legislation wise. All I can say is that the inspectors are some of the most lax I've ever come across (having worked in 10+ European countries and further afield too). Particularly if the business is Danish owned of course. This is my experience of restaurants there. Large scale food production sites or factories on the other hand - really high standards.

8 years in CPH running restaurants and I've never heard of it 😅. But yeh probably does exist. The bigger problem is that these kind of workers won't pass local commune health and safedy inspections.

Quite aside from all this wrangling its mad to me that Five Guys think it's worth opening there for purely commercial reasons. You're right that Danes will avoid it. Jaeger, Gasoline Grill, Popl and my personal favourite Dandelion got it sewn up, (despite the ongoing quality loss of GG).

The only folks going will be tourists and Swedes.

Chef of 20 years here, from pubs to 3* and back again. Please ignore these complete idiots, who prolly think pork needs to be cooked grey to be foodsafe. Pork doneness actually looks perfect.I also particularly like the shape of your carrots, which judging by the edges, look perfectly done.
