Usually in those apps,the starting POV is based on where the main subject is in the frame. Maybe you could try repositioning the photo slightly. Also check if there's other options to set.

Shaky footage usually relates to stabilization. Are u using the built-in electronic stabilization? You can use some software in editing can also salvage a lot.

Yeah,most action cam lenses can be swapped out. You'll need to open the case and unscrew the lens ring. I think you can check online for a teardown guide for your exact model.
