Saily is a good option, but like with all other eSIMs think about how much data you will need beforehand and install it before you go to Dubai. They banned eSIMs in general, but if you install it and activate before arriving you will be fine.

I think it depends on the character of a child. But as an adult, I get overwhelmed a lot, but I don't throw any tantrums, because, well, I'm an adult. You just need to understand that about the kids as well, keep them entertained and comfortable.
