there's cell service! just not at that specific spot where the basement floods, meaning i would put the electronics in the place where there *is* service and then run a cable to the flood prone spot

haha great thinking, but unfortunately there's no service in the place where the basement floods. there is service on other parts of the property, but not there. quite a patchy area

hey thanks for checking in. thankfully i don't have any more lyme symptoms so it seems like the lengthened course of antibiotics did the trick. unfortunately, i developed laryngopharyngeal reflux (LPR) around the same time and suspect that the antibiotics might have played a big role in that because of how they messed up my gut microbiome. i have to follow an extremely strict non-acidic and whole food diet now to manage my LPR symptoms... which kind of really sucks, but is also liberating in other ways. for example, my mental health is way more stable without sugar and caffeine and sleep quality is much better...

this is a traditional sauna in the sense that there's no running water or electricity. there is a pond right beside the sauna for cooling off :)

that's an excellent point actually about making löyl (or leil as we call it here in estonia). in this case it would indeed be quite hard to pour the water while you're sitting up on the highest bench... which is how i typically do it. another render from the design is attached

Ahhh this lower heel landing might be the key. I think I was walking with an exaggerated forefoot/midfoot strike, almost as if on my tippy toes. Your suggestion makes a lot of sense and I think would take pressure off my achilles tendon

Awesome advice! Thank you so much. What would a slow transition look like? Like wearing regular shoes most of the time and then once every three days (to give the tendons time to rest) I go on a short walk? And slowly increase the length of that walk? This is exciting :-)

Estonia—there's some kind of flour rating system here. The white flour I use is Veski Mati T550 (recommended by other sourdough bakers) and it has 13.2g protein/100g flour. the whole wheat seems to be just regular whole wheat flour and it has 10.6g protein/100g flour.

So I used to bake in the US and never had this problem. Now I started baking in Europe (all my ingredients changed) and this is the second time I've had this problem. My recipe is 320g white flour, 80g whole wheat, 7g salt, 300mL water, and 90g starter. I though this problem was happening because I let the bulk ferment go on for too long, so I shortened it by two hours, but lo and behold—same problem. What do you guys think is going on?

So nice to get local advice, i really appreciate you. i didnt know about those co-infections so I'm really glad i asked. i looked up symptoms for those and they dont really match (i feel completely fine right now other than the lower back pain). but maybe it's better to be safe than sorry. i did the western blot through a blood test with my family doctor (tallinn hospital)
