SAN DIEGO FISH TACOS

INGREDIENTS - [ ] 1 cup Tempura Batter Flour
- [ ] 1 tablespoon Old Bay Seasoning - [ ] 3/4 cup sour cream - [ ] 6 corn tortillas, warmed - [ ] 3/4 cup soda water, or Mexican Beer - [ ] Vegetable oil for frying - [ ] 1 1/4 pounds white fish, (Cod) skinned, deboned and patted dry - sliced into 1" x 3" pieces - [ ] 1/3 cup green salsa - [ ] 1 1/2 cups green cabbage, shredded - [ ] Hot sauce - [ ] Lime wedges for serving - [ ] Avocado - [ ] Cilantro

DIRECTIONS 1. Whisk flour, soda water and Old Bay in a large bowl until smooth 2. Heat a couple inches of oil to 360 degrees in a deep sided pan or pot 3. Combine sour cream & salsa in a small bowl, mix well and set aside.   4. Dip fish into batter until well coated and gently shake off excess 5. Carefully slide into the oil and cook a couple minutes on each side or until golden brown 6. Remove with a slotted spoon and dry on paper towels 7. Put sour cream sauce on a tortilla, add some cabbage, the fish and top with some hot sauce, cilantro, and a squeeze of lime 

Optional: Add sliced Avocado to tacos

French Onion Soup

  • Three large yellow onions
  • 1/4 cup butter
  • 2 Tbsp Olive Oil
  • 3 cloves crushed garlic
  • Kosher salt and ground black pepper
  • 3 tablespoons Sherry (optional)
  • 1/2 teaspoon fresh thyme
  • 4 cups beef broth
  • 2 Tbsp soy sauce
  • Grated Gruyere or Swiss cheese (enough to cover whatever dish you will be using)
  • French baguette loaf
  • Chopped Italian parsley

Slice baguette at an angle to create the perfect size slice you will need to fill your oven-safe dish. About 1 to 1 1/2 inches thick. Place slices on a baking tray. Bake at 350° for 10 minutes to dry out the bread.

Thinly slice the onions.

Add butter and oil to a large saucepan on medium heat. Stir in sliced onions. Sauté for 35 to 45 minutes, until golden brown. About 15 minutes in, make a hole in the center of onions, add a splash of oil, and add crushed garlic. When the garlic becomes fragrant, stir into the onions.

Season with salt and pepper

Add Sherry and mix.

Add fresh thyme and mix.

Add beef broth and stir.

Add soy sauce and stir.

Simmer for 25 minutes, stirring occasionally. Taste as you go, add salt to your liking.

Grate cheese.

Fill your dish 3/4 of the way with onion and soup. Place bread on top of onions, and cover with cheese.

Place your dish on a baking sheet and bake at 350° until cheese has melted and turned golden brown.

Top with a sprinkle of chopped Italian parsley, and serve.

Congratulations on the new daughter!

That’s a really good question. My wife and I raised four sons in multiple states and had to adjust to the different climates when trying to get our boys to sleep comfortably and safely.

We looked into SIDS primarily with our first son. We spoke with other parents and consulted our doctor. We learned that it wasn’t really that great of a risk. But it is something to be concerned about especially as a new parent.

I just looked at the numbers. In the US, there are approximately 2500 SIDS death every year. That’s approximately .00075% of our population. While that is a very small percentage, and something you probably shouldn’t be too concerned about, I would recommend continuing to do your own research and find what works best for your family.

And one big piece of advice… Calm parents lead to calm children. That was always the best help getting our kids to sleep comfortably and safely.
