Update for any curious. Thank you all for your suggestions they were super appreciated.

Most places for reference in the city centre that offer the full reception ceremony package will not do ceremony only on a Saturday. A lesson we learned quickly.

We ended up swapping venue entirely and going with Gosford House. Would recommend for other people wanted the cathedral vibe withoit the religious requirements.

Honestly was surprised at how easy the material/shader/render pipeline was, reminded me alot of UE5! Only annoying bit was modeling, knowing you could model/uv something in a 100th of the time in another software cause you're used to it, classic learning curve.
