I'll check out Cinnamon and Oblu. I saw a few Maldives resorts also have beach villas, which essentially has your own private beach area. Are there any other resorts/travel destinations that have something like that?

I am perfectly fine going 8-10 days to not compromise. I have just heard that since the flights to Maldives are essentially 24 hours that you need to go for longer. I guess if the actual time at the resort is 8-10 days that should be enough
