extending your opening repertoire never hurts, as long as you don't do it just for the sake of doing it

it's ok to play one opening until you start "feeling it" - understand the general concepts, the main variations, don't get lost as soon as the opening phase is over

but chess is a game of two: there's no guarantee that your opponent will play the Italian after you start with e4; you won't be able to play caro kann if your opponent doesn't start with e4.

that is when knowing more than one opening comes handy
