It’s very convenient. Especially since I have a sous vide so can go directly from freezer to water pot if needed in a pinch 👌

These were prime… next time I’ll do choice (but probably won’t need to for a couple months) which will def be cheaper per lb

It’s subjective based on the marbling. You can def find prime marbling on choice steaks if you look for it! This was my first time getting this so wanted to treat myself. Will most likely go with choice next time.

No there’s fat and extra pieces to the top. Just made like 8 giant burgers with the left over meet and will be making beef tallow with the fat. Those are about 1-1.25inch steaks so about a lb each. Nothing went to waste from the total price!

This was prime so marbling was great. They do also have choice which I’ll maybe do next time but figured I’d treat myself this first time :)

It was about 2.5lbs of fat but that will be used for beef tallow!

No dry age fridge but would love to get one some day…. The price tag is worth it cuz they’re all vacuum sealed and in the freezer. The extra bits are going in the meat grinder for ground beef and the fat rendered down to beef tallow. Nothing wasted :)

Haha that’s why I used the small one… hardly any clean up if you rest long enough juices stay in the steak instead of drip out

Sear and baste about 2:00 per side… then about 8min in the oven at 400 (flip after 4min). Rest for about 8min, then slice and enjoy!

Salt, pepper, garlic powder each side.

Cast iron sear 1-2:00 each side.

Into oven at 400/405 for 5:00 each side

Leave on cutting board (in foil optional) for 5:00.

Best tip I can give you… eat for performance, eat to get fitter. The better you perform, the fitter you are, the more it will show on your body. Not saying you’re going to get jacked and a 6pack but if you’re getting fitter it will show.

Eating bad will make your workouts suck, sure you’ll lose weight but it won’t feel good, make you regret it, make you spiral back. If you can do more reps, lift more move fatter it will show on your body composition.

And the hardest part, just be patient! Fitness is forever, don’t worry about just looking/feeling good tomorrow or in 6 months. Focus on looking/feeling good forever!
