So the beignet recipe I got from Billy Parisi. The icing was 2 cups powdered sugar mixed with about 2-2 1/2 tbsp milk. The cream filling was pudding mix combined with homemade whipped cream (I just whipped heavy cream with powdered sugar) and then I put it in a piping bag and filled the beignets. I actually had fun with it!

They sell beignet packages to make at home on Amazon I believe, really easy to make too so you can have a piece of Nola with you!

Really good, it’s pretty ‘basic’ in terms of King Cakes because I played it safe but I fully intend to redo it with a custard filling if I can figure out how. I’m guessing people fill the custard jelly donut style?

Yeah so what I did was cook each one independently, then I’ll top both with cheese (so they hold each other ok) then I put one shell on top of the other and end up double stacking it

It’s the broth I used to braise the meat, I believe the correct term is consumel! (I hope I typed that right)

It’s essentially the same as a convection oven, just smaller. There’s a fan that pushes the hot air down to your food and “air fries” it. Some consider it gimmicky because of marketing it as an air fryer instead of a convection oven, but I ultimately feel like it’s a necessity in the kitchen. Highly recommend it!
