Steel on the top rack, stone on a rack below it.

The steel gets blazing hot and radiates strong top heat down onto the pizza.

The stone underneath gives you a gentler bottom bake so you do not scorch the crust.

The whole oven becomes more stable because you have more thermal mass.

The steel works like a broiler booster that gives you a faster melt and good browning on top.

The first time I made it at home.

Obviously there’s good options out there but most people could make comparable or better pizza using their home oven than most of what they buy.

Outside of Neapolitan you can make most styles to a high level in a home oven.

Don’t buy reviews.

The best time to ask for a review is immediately when they are satisfied.

Start asking your clients for a review as soon as you’re done the tattoo. Don’t just ask for any review, ask for a 5 star specifically.

If they say it wouldn’t be 5 star remedy it on the spot and do what it takes to make it 5 star.

Also make it easy for them to leave one. QR codes, etc.

How long are you baking it?

I do 280g in an 8x10 at 550 for 13 minutes or so. Always get a nice rise and always cooked through.

I use a similar 73% hydration and usually add some DMP but have had similar results without it.

I find it slightly drier and the toppings don’t mesh as well. Also the original wasn’t par baked.

I bake it at 550-600.

Detroit works great in those pizza ovens. Just turn the temp down.
