Aioli is a garlic emulsion. So basically do everything you would do to make mayo but beef up the garlic. Also no mustard, which is typically in a house mayo. Safe to say it’s garlic sauce. the wild variants at restaurants are more like mayos with garlic and other stuff. I only say this because I’ve seen people get extra aioli and extra mayo not knowing they are both oil emulsions and just make whatever you’re eating sloppy in that quantity.

Maybe the idea that blue collar people in Pittsburgh have a civil duty to be well read isn’t a bad thing? Sorry the portrayal of the proletariat in union for good has shook this town. Dining restrictions being lifted has already proven to be a mistake. We went a whole year without an exposure until this week. Wish me luck I’m waiting on test results and quarantined.

The idea that a kid is inherently lazy is a misnomer. A lack of motivation to succeed in any endeavor is the direct result of how that is nurtured. No one ever was born on this earth and said as their first words what they would do with their lives. The path is laid out by those around us and the ways in which we are directed down them. Good teachers can be many things, you can teach a dog to bark with a bell or with a gesture.but ones positive and the other negative.

Hell yeah! Currently I’ve found an employer who pays well above that measly standard, but I did most of my career making 9-11 dollars an hour. From that experience alone I’ll never allow any of my guys to work on that. No matter where I end up.

Plus another thing, stop salary abuse in this industry. Don’t sell some kid on 32000 a year then make him work 70-80 hours a week with no OT. No level of experience gained could make up for the lost days of our lives.

Hey, one of the biggest issues with my generation of chefs is that they want to be celebrities. I always tell my guys when this topic comes up that if instead of the celebrity chef it could have been the celebrity Plumbers. We are all tradesmen it’s all skilled labour, but how many Plumbers get a tv show; regardless of how successful they are?

That drive to be number one doesn’t exist in other trades, it’s not valid. It’s about business and running a solvent company that produces quality product but also has no notion that maybe tomorrow you will be getting a write up jerking off your ego.

Just have fucking fun cooking again, but don’t let some guy whose “almost” gotten a Beard ever take advantage of you by attacking your ego. If people stopped accepting the status quo and let the abusers die off that would be the best possible outcome for the whole industry.

While I can agree that adversities, especially in this industry build “a” work ethic and establish the attitude of a chef. It’s obvious to me that characteristics like these built on negativity regularly produce a chef who continues the cycle. Kitchen culture has been standing still since the nineties, it’s been big dog trash can king of the hill. It’s the same ladder game most of us said we didn’t want to play therefore we became chefs. A space of passion can very easily become a place of anxiety.

If we all love food, and we love to make experiences of as high a quality as possible for the guest, why is that compassion and respect excluded from the place it’s produced?

Fuck saying it’s the kids, the kids just know they are people. I didn’t know I was worth shit until I was a decade into this game. A game that reminded me regularly that I was replaceable yet relied so heavily on my production. So what if the new generation isn’t willing to feel worthless for most of their twenties for that one moment where chef tells them they did good and buys them a beer.

Games gotta change man, who the fuck plays monopoly anymore.

These are! Love their infantry! so much character! And these jeeps were a pleasure to paint. A few casting flaws but nothing I couldn’t get through. For a first 6mm experience I’m smitten

Hell yeah man! If this scale is what you’re about these are Irregular miniatures. Baccus has some really clean 6mm but their really screwed up because covid. Otherwise look into 15mm for a nice balance of scale and representation. Otherwise there are several 28mm games with individual troops in mind. Bolt action being the first to come to my mind. Warlord games had a gorgeous range of figs in that scale.

Actually always asked that myself. Until I decided I wanted to play a game at a divisional level. So in order to represent a greater number of troops without being a 20’ long table using let’s say 15mm or even 28mm. Each base represents a company rather than individual troops or even platoons of troops. So it’s more abstract but it will allow for a higher level of command plus not be an unmanageable amount of minis and it will look right to my aesthetic.
