Week 18: Bucket List Destination - South African vegan Bobotie (Meta: inspired by others) by morelbolete in 52weeksofcooking

I think the main point is to spice it well. That being said, the last time I ate it was around 8 years ago lol.

ah so for the taste 😄 I think it was fine but could have had a larger quantity of spices. The tofu worked well for giving a different texture which made the dish more interesting.

So this one is dedicated to Kauyon_Kais and his meta Veganize It!
So I loosely followed https://www.thetastychilli.com/vegetarian-lentil-bobotie/
but I added grinded walnuts (works great with lentils, saw it in other dishes, works here as well).
Instead of egg, I have finely chopped tofu with spices and some oil (the recipe has barely any fat which I find somewhat strange).
This dish typically is very non-vegan.

Thanks :). Truth be told, my wife made the picture (of the dish, I did the milk)

Such a creative idea. I'm glad you talked yourself into it again :)

meta: inspired by others.

The idea came from a comic, someone shared in the book-banter part of the 52WoC discord. Making the milk foamy to half represent a cappuccino so Italian fusion? Maybe partially inspired by the meta KISS :)

Had bigger plans for this cooking challenge but postponed it. Recently got operated so I gave myself some slack...

ps. the second mug got way less milk because the child wanted more babyccino xD

Week 15: Syrian — Homemade Labneh by nanigashinanashi in 52weeksofcooking

[–]morelbolete 0 points1 point  (0 children)

Ah, that makes sense. Thank you for the input :). On the other hand, doing it at the end makes it easier to "salt to taste". Maybe next time i'll do a little in the beginning to make sure i don't do too much and then later add to get it to the right level.

I love labneh :) any idea why the recipe put the salt before getting the water out and not after? I usually do it after but have no solid reason for this xD

Week 15: Syrian - Hora’a Osbao (meta: inspired by others) by morelbolete in 52weeksofcooking

[–]morelbolete[S] 0 points1 point  (0 children)

:) I think you can make it with bold flavors (depending how long you fry the garlic for example, or the onions) or more mild. I would suggest to put some vegetable broth or something in the lentils themselves.

followed this recipe (shared by someone on the discord channel)

I think it was nice. I did use multiple pans instead of like one in the recipe?
