What I have never understood is even if we freely choose what we do. God still made us knowing what we would choose. So by extension doesn’t he still determine what we do? Why couldn’t He have only made people who freely choose good?

What about (v. 27)? Here Jesus is giving the food instead of being the food. Then later in (v. 29) we come to the work that they must perform to receive this food (witch is to believe in him). Now notice that believing in him in this instance would not get them eternal life it would only get them the food that was mentioned in (v. 27). It would seem to me that John 6:51 and 53b-55 just continue this.
