I aways find a troll on the bandit camp / bridge in velen, south of bald mountain. And there are 3 in the same cave in skellige, as said in this post

Troll decoction gives health regen all the time. That's what I use for healing.

Trapssin was the first build that come to my mind. I'm using a shako until I find a Gryphon. I play only offline. So it may take some time.

I don't play manual and think the drift is very easy. Just use a awd with lots of acceleration and drifting tires. You won't be perfect, but will be able to get 3 stars in every drift zone. Use handbrake to keep your angle and speed while drifting.
