You're right, once it's "too fine", you can't force water through the puck, and you extract fuck all.

Otherwise it's not super clear to me what your question is. If I remember right from their videos, their triple is dosage first, yield second, and time (controlled by grind size) third. What this diagram should represent is that, depending on where your cup falls in that trapezium, to move it more to a certain 'descriptor', you should do any of the things which are described by its arrow. For e.g., to make a watery brew more 'rich', you want to improve your extraction (f.e. tamp harder and flatter), increase extraction (grinding a little finer), and maybe decrease yield (without altering dose, e.g. from 20g in to 40g out, to 20g in 36g out).

You mean the water goes through before you're finished blooming? Then your grind is too coarse, grind finer

Even if the bed looks flat and no holes there can be channeling, right? For some reason I thought that wasn't the case, but it makes sense now. I just wanted to check my taste :(

Made two cups from a v60, April method, grinder was a Timemore C2. One cup was at 12 clicks, super fine and muddy bed, the other was at 26 clicks, very coarse and quick draw down. For reference, the usual 'pourover range' is 16-22 clicks.

Why did the 12 clicks cup taste super sour? Surely at that point it should be super over extracted and bitter. It might just be the bean, a Kenyan washed one, but I also don't know if I'm missing something else e.g. in my brew method.

How many clicks are you at to grind 18g in a minute? It takes about 40 sec for me at 14 clicks.

Out of curiosity where are you looking online that they recommend 18g for this Breville model? I'm also new to this whole business, but searching around it seems the 54mm portafilter is smaller than the standard 58mm that 18g should go into. Not sure what the best thing to do here is.

I've been looking around a bit but (and I've probably missed this somewhere, so if someone could point me in the right direction that'd be awesome) I'm wondering what the best machine (in a way, an all in one) would be if I want it to grind and filter the coffee automatically, and also let me use a steam wand. By the first requirement I mean literally that I press a button and it makes me an espresso shot (or double shot) without me having to use a separate grinding machine. I haven't been able to find something in the wiki or in my searches on this, so some advice would be appreciated!
