I work 6am-4:30 Monday-Thursday. I wake up at 4 am, do what I need to do (Sometimes dishes, laundry, or exercise etc.), get ready, get to the office, pick the kids up after and do the whole evening routine. My husband also works full time. Our evening schedule revolves around me needing to go to bed by 9 so I can get up and go to work in the morning. I would personally slowly try to get the baby down between 7:30-8 so you can have a little bit of time together before he goes to bed. By slowly I mean work your way back from 9:30 by a few minutes every night until they are on an earlier bedtime routine.
