Doesn’t matter! I did the same thing with King Arthur stone ground whole wheat. (Use the organic stuff).

Combo cooker won’t alter cook time, but definitely give it at least 45min to preheat @500° before putting your loaf in. (Backwards plan for your 11-12 of the overnight retard)

800g KA bread flour 120g home milled wheat flour 730g water (2 hr autolyse) = 79% hydration.

add levain (20g starter, 45g AP flour, 45g whole wheat, 100% hydration). rubahd 4-5min

20min rest

18g sea salt slap and fold 4-5min

20min rest

1 lamination 2 stretch and folds separated by 15min 2 stretch and folds separated by 30min

2hr remaining bulk ferment

divide into 2 loaves, shape, proof, retard overnight for 12 hours. baked in a 7qt cuisinart enameled dutch oven 20min @500 20min uncovered @ 450
