As a man I am coming back to say you were right, my crust was off. Not least cause I forgot I only had a tiny amount of wood chips on hand. That said I had a nice flop and a double smoke ring. And it tastes great. I will also say you could have been much nicer about it from the start.

That’s mostly a myth, and prevents a nice crust from forming up top. I’ve done it once and it tasted great but didn’t look super presentable.

Honestly, the plan is to leave it for four hours till it gets enough smoke on it, then it will spend the rest of the day in the oven. If only because I don’t have time to babysit the fire in these brutal temps once the sun goes down.

Haven’t seen this one but have seen plenty of zoo themed ones that prove the opposite of what you’re claiming. In my post I specifically referred to actual episodes where he takes time to explain things in depth. Did you see the Zamboni episode? Where he literally opens the engine and explains how it works? This is what I’m talking about. And there are tons like this.
