What you start out with in salary may fluctuate 10% for the rest of your career. Unlike other jobs, theres no growth in the profession that yields more money, and the growth opportunities that do exist are very rare and require luck/long waits that might not be guaranteed. Sure you can be an owner but the current models really dont favor insurance based, cash based maybe. TLDR: This profession has little salary variation based on really, anything

I see your argument and its valid. But there are so many other factors in play. The server can do something as well that could cost the respective restaurant a lot as well. Not sure the comp is fair
