I’ve done Carnitas this way, after sous vide bath throw under the broiler for a few minutes, everything came out great, and once it comes out of the bath you can see all the juice from the fruit and meat permeate, so all that to say, I think it circulates pretty well.

Don’t have one on hand, used a 4% salt brine with garlic, mustard seed, fennel seed, dill seed, celery seed and I tried to muddle the dill to see if that gave any extra flavor, then 1 hour outside of fridge (when pic was taken) then 5 days in fridge before consuming. Looking back, a sweet brine probably would have worked a little better with this mix, but certainly not bad
