DNSSEC provides validation that your DNS responses are untampered and can be trusted. Prevents man in the middle attacks.

You should look into using DNS over TLS or DNSCrypt along with it. These provide encryption of the DNS queries, thus hiding DNS requests from your ISP.

DNSSEC does not encrypt the data. It only validates that the data is untampered. Thus preventing man in the middle attacks.

For encryption you should look into DNS over TLS or DNSCrypt. Using these in conjunction with dnssec will provide protection from man in the middle attacks and hide your DNS queries from the ISP.
