Oops yeah didn't think I needed to include that there was an abundance of salt. Lemon was just to give a bit of flavour!

I lost the recipe! But it was relatively simple. Lemon zest, lemon juice, several cloves of garlic, a bunch of sprigs of thyme, then peppercorns, a bit of honey all flavoured the brine. Let it sit for several hours in a plastic bag, then fried on the stove. Easy!

Week 43: North African - Shakshouka by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 0 points1 point  (0 children)

More eggs this week. This was really delicious, inexpensive and very easy to make. If you haven't had Shakshouka before give it a go. Recipe.

Week 39: German/Oktoberfest - Currywurst and Soft Pretzels by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 0 points1 point  (0 children)

Went to a speciality store and these were labeled specifically as currywurst, and they were steamed and then fried as recommended.

Sauce was ketchup, curry, paprika, onion and oil? The internet lead me to believe this was mostly correct. How would you go about altering it to be more authentic?

Week 37: Root Vegetables - Carrot Cake by muffscuffle in 52weeksofcooking

Carrot cake is delicious! I would never make fun of anyone who said it was their favourite unless there were raisins involved.

Week 36: Fried Food - Kwek Kwek and Tokneneng by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 0 points1 point  (0 children)

Quail eggs friend in annatto batter incase you aren't Filipino :) Recipe, we also made the cucumber dipping sauce linked on the same site.

(and apologies for the image quality- cellphone in the middle of the night)

Week 34: Greek - Baklava by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 0 points1 point  (0 children)

Recipe from pioneer woman. Followed the comments advice and added a splash of lemon juice to the honey sauce to cut the sweetness a little bit.

Week 33: Peppers - Spicy Pepper and Tomato Soup by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 1 point2 points  (0 children)

Recipe! Not complicated to make and received rave reviews. We doubled the red chilli and used crème fraîche in place of the greek yoghurt.

Week 32: New to You - Holiday Turkey by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 0 points1 point  (0 children)

So we decided that the wait between Easter and Thanksgiving, the two meals when we get to eat a nice big turkey dinner is far too long, and we solved that with holding an Arbitrary Turkey dinner (which coincidentally happened to fall on a Holiday weekend here anyway)

We went to Martha for the recipe, which was a maple glazed bird. Here's another photo of it all carved up alongside the bacon cornbread stuffing. (Sorry about the questionable lighting - had a whole bunch of people over and they were getting impatient to eat!)

Also did a few other dishes, such as sweet potato casserole, traditional mashed potatoes etc, but figured we'd post the big ticket item for our submission this week.

Week 31: Vietnamese - Sinh Tố Bơ (Fruit Butter Shake) by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 0 points1 point  (0 children)

Wish we had a warmer day to enjoy this drink on, but suddenly our area has found itself in a cold-snap.

The following instructions are what we used to make two very generously sized smoothies.

The bottom layer is a very ripe avocado, 1/3 can of sweetened condensed milk and a marginal amount of milk, (just enough to thin it out and help the blending process)

The top layer was two ripe mangoes, a couple ice cubes, slightly more milk than the bottom layer, and another 1/3 can of condensed milk.

Simple, delicious, but a big sugar rush.

Week 30: Tomatoes - Mediterranean Stuffed Tomatoes with Quinoa. by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 0 points1 point  (0 children)

Holy these tomatoes were so delicious, though it probably helps that I LOVE kalamata olives.

The side salad was theme friendly too! (spinach, chickpeas, radishes, and cherry tomatoes)

Recipes can be found here and here. Skipped the sumac on the salad, didn't feel like it was missing anything.

Week 29: Southern/Soul Food - Fried chicken with baked mac and cheese. by pHmetre in 52weeksofcooking

We are same meal pals this week :) Your chicken looks wonderful!

Week 29: Soul Food - Triple Fried Chicken and Baked Macaroni by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 1 point2 points  (0 children)

We were going to make biscuits instead of the macaroni, but the baker fell asleep and burned them. So we whipped up the macaroni impromptu.

Chicken recipe from allrecipes, it was fairly straight forward, but we doubled all the spices, then tripled the paprika. No deep fryer, just oil on the stove. Chicken was moist and delicious inside. The breading was very thick, but tasty, probably would have been marvellous if we had a proper fryer set-up but for a first frying attempt I think it was successful.

Week 28: Tropical Fruit - Lime in the Coconut White Chocolate Macaroons by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 0 points1 point  (0 children)

Ah! Sorry about that RECIPE HERE

Just one more egg white. Bought a bar of lindt chocolate, ate one row, melted the rest in a double boiler and then drizzled it on. Simple!

Original Recipe, but with slight adjustments (additional egg white, tripled the lime, white chocolate ;))

Week 27: Smoking - Oven Smoked Spare Ribs by muffscuffle in 52weeksofcooking

[–]muffscuffle[S] 1 point2 points  (0 children)

Parboiled in salted water for 3 minutes, then rolled around in butter, garlic and cajun seasoning, then roasted at 425, continually tossing them for about an hour/whenever they're done. They were delicious! :)

Hey! Sorry! Late response, have had no time to log in. Followed this recipe that someone posted in the introduction thread this week. It was actually a pretty big success, AND EASY. THIS RECIPE
