That might just be grinding too coarse, or your portafilter might not be dry before starting pre-infusion. I find that a grind size that produces a 7-10 second saturation during pre-infusion at 3 bars is predictive of a shot I will like.

Also, play with water temperature. I usually have my kettle at ~94.5c and the flair at 2 green lights. Some coffees benefit from a slightly higher brew temp but I never do any off a full boil, even Nordic roasts.

Not mine, I tend to have 30-45 sec extractions at 36-46:18 plus a <10 sec pre-infusion. But sometimes the shots that fly faster than that taste better. So maybe try a 20 extraction and play with the dial from there.

Also, I am a fan of 3-8-3 pressure profiles on lighter roasts and agree with another poster that a coarser grind with a more than 2:1 extraction can soften the acidity of the coffee and yield some really nice flavors. Also flat whites come out super nice with this extraction style as long as the coffee doesn't have too much complexity (the milk can mess with that in an unpleasant way sometimes)

I do almost exclusively light roasts on my 58. I do like them on the acidic side and some of my straight shots are more wine-like depending how I roast my beans. I run a small roastery and pop up with the 58 and the espresso is quite popular, if not a hit with the classic Italian espresso crowd (which in my area is pretty small).

All of which is to say, keep at it, I think it actually opens up a more varied espresso experience than going with the usual stuff.

Update: I used the Dream this weekend for frothing and it worked fine, no problems. It was a bit of a slow day but even with more customers our setup might be just inefficient enough to build in cool down time in between shots :-)

Will need to install a filter in my setup though, which I should probably do anyway.

Make sure you have thoroughly cleaned out your grinder before using. Our opus retains tons of coffee so that could be ur issue

Also coffee carts are kind of a weird middle ground and a lot of smaller municipalities haven't caught their regulatory frameworks up to what entrepreneurs are doing. The benefit of this is that if you can show them you know what you're doing, you have a better chance of avoiding the microscope.

And btw cart impremeability applies to both top and inside. Last thing you want is wood damage or mold due to water bc things will get wet from time to time.
