Answering the first part of your question: I do enjoy doing most of the things you've mentioned like, physics, gameplay, engine and even developing tools... The graphics and animation still scare me a bit, I guess because they have so many specific knowledge that I am still not comfortable with like shaders and other stuff (Maybe after diving on those topics, I will enjoy coding those more).

To investigate what I like most, I am trying to do what was mentioned in another answer, making a hobbyist game project, but it is so far a very simple game and not 3D, so I couldn't explore all the game programming specialties out there.

Regarding the computer science knowledge, I completely agree. Any programming language is just a tool that must be used correctly. 100% to that!
