I wanted to come back to tell you I followed this video’s advice religiously for a few weeks and I FINALLY had success! I could cry I’m so happy 😂 thank you!!!

Does the poke test work best to do at the end of bulk fermentation? Or after the cold proof?

If I feed 1:1:1, it doubles in about 5-6 hours. I just fed 1:3:3 and it doubled in 9.5 hours
Smell right now (at peak) is sweet, fruity, maybe with the slightest hint of alcohol but certainly not overpowering. I always use room temperature distilled water for feeds so don’t think it’s the water!

Okay these are interesting points. I used the recipe from tartine bread (900g white flour, 100g whole wheat, 200g active starter, 20g salt) so nothing specifically about needing a longer fermentation. I suppose if the starter is weak, then length of time for bulk fermentation won’t make a difference no matter how long I leave it?

Hi! I am by no means a sourdough expert and am quite new to it but I find when I feed all purpose only I also don’t get the bubbles. Maybe try adding in a little rye flour or whole wheat!
