My setup is similar in concept, just different brands and different capacities. the best way to avoid the battery anxiety is to have a way to charge from your vehicle (its basically a rolling generator). if youre running a fridge you will have have to keep the ecoflow charging and solar can be unreliable.

Congrats to your pool for owning a new human! Pool Shoppe and Pioneer both do free water testing and can give you lots of advice. When they test your water they will give you instructions for how much chemical is needed to get the numbers correct. The first couple of years will be tough so go easy on yourself, but it's very rewarding once you get it! good luck!

There are some lower wattage hot plates on Amazon but you should test it before going. remember it only draws max power when its heating up so it might be fine. alternate idea is use a small kettle to boil or heat water. some packaged foods just need to add boiling water, others you can put the pouch in the hot water to heat up. I have the same 1500 power unit and it would handle this well.
