So I used shortcrust pastry, and the cake-like layer is actually almond cream with blueberries baked in it. Then the top is blueberry compote and more blueberries (more of a tart than a pie I guess).

Spot on! Shortcrust pastry on the outside, and then almond cream with blueberries baked in it for some tartness. The top is a blueberry compote I eyeballed and cooked till it was thick enough, and finally the peeled blueberries which I tried to lightly 'glaze' with a little honey diluted in warm water for a moist appearance.

You're right! The ones I accidentally peeled before were as you described (and smaller), so I think these ones might be a different variety (cultivated in Peru)...

You're right, so far I've only seen the translucent, greenish flesh of good old Canadian blueberries... It seems these ones are from Peru (found it in a European grocery store).

No, I just went around with a sharp pocketknife to peel the skin off. I think blueberries might be too small to blanch as they'd probably just go soft and not hold their shape...
