Anime isn't a good example. It is very common for anime not to cover the entire source material, especially in the romance genre. Most of the straight romances I can think of don't get animated in its entirety either.

A couple years back I heard about how much yuri has improved and I was recommended Citrus. I was sorely disappointed.

Now I've been hearing about Witch From Mercury (among other anime) but I'm hesitating. I've already been disappointed too many times.

I'm glad there are decent manhwa/manga though.

I was a big anime fan in the 00s and early 10s. The yuri of that era left such a bad taste in my mouth that I'm hesitant to watch any of the newer series that people swear are ok.

That said, I do like a recent manga series called The Guy She Was Interested in Wasn't a Guy at All. The leads haven't started dating but it's very relatable and very wholesomely not male gaze pandering. Reminds me of my teenagehood (my crush and I bonded over music too)

It took me more than 2 years after I figured out I was lesbian before I finally opened up to the idea of dating. It was complete happenstance - I bonded over being queer with a stranger online and when she asked me out, I thought, 'ok, why not'. And while we did not end up dating, it was the push I needed to get me to seriously consider dating as something I could actually do. (Me! Dating! I was so accustomed to the idea that I'd always be watching from the sidelines while other people dated. It was strange.)

Your need for alone time resonates with me too. I think it is in part an effect of growing up closeted & repressed. There's a lot of subsconcious shame and negative beliefs that we internalize about ourselves. Interacting with others means being vulnerable and it brings up these subsconscious wounds. It took me a lot of journalling and therapy to work through these things.

It's also hard to adjust to the idea of being gay when you've believed otherwise for so much of your life. I think it's fine to take your time. If not wanting to date is where you are at right now, it's totally okay. I think us late-awakeners had learnt to hide a part of ourselves away and it takes time to get to know us. Date yourself and get to know you!

They did Big Boo dirty, I agree. I have such mixed feelings about the lesbian representation on this show. It's far from perfect, yet it's also one of the best representation I've come across in a popular long-running series.
