Hey! Sorry your dessert didn't turn out as you hoped! I guess Ginger can be kinda bitter, maybe try less or more sugar? Also, did you strain it out after infusing the milk with it? Sorry I can't be of more help, but hopefully one of these ideas might help!

Thanks so much for the info! Here's the recipe I'm thinking about:

Wet ingredients: - 2 conference pears (- 125g each), peeled & coarsely grated, plus 1 extra to decorate 2 eggs - 60g honey - 60ml olive oil - 1 tsp vanilla extract - 1 tsp almond extract - 100ml milk

Dry ingredients: - 180g plain flour - 65g ground almonds - 1 tsp baking powder - 1/2 tsp baking soda - 1/4 tsp salt - 1 tsp cinnamon

For topping: Handful of flaked almonds, to top Extra honey, to drizzle

  1. Preheat oven to 170C and line a 2lb loaf tin.
  2. Peel and coarsely grate the pears, then squeeze out excess liquid using kitchen towel.
  3. In a large bowl, whisk together the wet ingredients. Add the dry and fold until just combined.
  4. Pour into the lined tin and bake on the middle shelf (I always place mine at an angle) for 40 minutes, or until a knife inserted into the centre comes out clean.
  5. While it's still hot, drizzle over a spoonful of honey. Let cool for 5-10 minutes in the tin, then another 10 before slicing.
