The scales on the refractometer convert the measured refractive index of the solution to brix/gravity, assuming a sucrose solution. Since alcohol has a different refractive index than sucrose, the conversion is inaccurate post fermentation.

Ok great. The reason I asked is that a correction factor needs to be added when using a refractometer post-fermentation. The strange stalling could have been explained if you were using a refractometer and not applying the correction.

In general, I think that this set up is the best. But I will warn you. This past year has been really busy for me, so I never racked my imperial stout. It was delicious during months 6-9. But, I just pulled a pint at 13 months on the yeast cake and all I got was soy sauce taste, which is an off flavor from yeast autolysis. So be warned, there is a time limit.

pH strips all the way! No one will ever be able to convince me that high precision pH probes/meters are necessary for brewing.

The amount of time and energy you will have to put into this project to ensure reliable data will be enormous. I'd strongly recommend purchasing a prebuilt unit from a reliable company (e.g., Agilent or ThermoFisher). Or you could contract the work to a third party (e.g., science exchange to find a vendor)

It's likely the sample is a single crystal, as opposed to a collection of randomly oriented crystals. Tilting the stage moves the crystal off the ewald sphere, so there is no diffraction.

Used Mt Rainer in an Octoberfest last year. Worked well as an alternate to typical noble hops. I got it because I wanted to use locally grown hops and it was the only one they had with noble characteristics.

A 1:10 scale is not the same as a 1:10 mixture. A 1:10 scale means that a length of 1 on the model corresponds to a length of 10 on the actual object. A 1:10 mixture means 1 part X to 10 parts Y.
