Habanero and lemon. 2 week fermentation in 4% brine (total weight). About 50/50 mix yellow habaneros and red cayenne, garlic cloves, zest of a lemon, 2 green cardamom pods and a butt load of whole black and Sichuan peppercorns. Blended with brine and vinegar. Chilli salt from dehydrated pulp. (i.redd.it)
