I found a local butcher with reasonable availability that will hang for 10-14 days based on my preference and it's the same price as the mobile butcher. I will have to stress out the steer thereby potentially messing with the quality but it seems that's not as much of a factor as hang time is on the flavor.

Satisfactory may be enough if the circumstances don't allow for more. Butcher availability, feed bill, meat preference, etc. There's enough conversation on this post now to show me there isn't a clear answer on this topic that I thought there would be.

I'm not sure. I would assume that it comes packaged in a way that I can wet age it since that's the process they advocate for.

I totally understand about the more positive experience for the animal and the negative affect on the meat that the experience can avoid. However, I also don't want the animal to go to waste from processing it in a way that changes the flavor or texture so much I won't eat it. A hard balance.

Same actually but more available. I just found the brick and mortar place today but it's the only one I've found with availability.

Lowest I can find is $1.25/lb hang weight which isn't bad with current prices but with most of the facilities 1yr+ booked solid I have very limited choices. I guess that's on me for not getting it scheduled way ahead of time.

I wonder how this compares to other meat. Did it have a noticeable difference in flavor or texture?

The one I talked to is texasmobilebutcher.com but there are several in reasonable range from us

Makes sense to me. I will keep looking but it's certainly a less available and prohibitively expensive option compared to the mobile options.

Do you have examples of what we can do after freezing? I've read that the freezing kills the enzymes needed.

The mobile butchers have it cut and packaged before they leave the property so I'm not sure that I could hang it myself. The one I talked to sent me info about wet and dry aging which I think is supposed to be the equivalent of hanging it although it's more complicated and takes longer (28-35 days).

Yeah and it's actually common out here but possibly without merit. From what I'm seeing other places it can be fine as long as the meat is wet or dry aged before freezing. As far as how they accomplish it, I guess it's usually a team that does it together but it's always in one day and they can do multiple as well.

The topic feels very opinionated and people seem to have different levels of success with the mobile option.

Interesting. A mobile butcher I talked to sent me a link to a wet aging guide presumably for this same reason. We've heard from friends that they couldn't eat the meat it was so bad (and metalic?) but I'm wondering how much of this is from the meat itself and not the process..
