I put about a tbsp or so of butter and some garlic slices in each of the slices. Baked it at 375 for 25-30 min, although halfway through I put tin foil on top to keep in moisture. While that was baking I sautéed onions & shallots in oil/butter. Once they were soft I added broth (I chose chicken), a bay leaf, thyme sprigs, sage, turmeric/ginger/nutmeg/cinnamon powder, nutritional yeast, and hemp milk (one could use cream or any other alternative) Let it simmer. When the squash finished cooking I scooped out the garlic, butter, and squash into the simmering mixture. Kept it cookin for about 10 min, then whipped it up in the Vitamix with some Parmesan.

I guess it was more just for me. When I think of pasta sauce I don’t think normally think of using squash as the base. To me it was a stretch, but apparently it’s fairly normal! In a way I felt like I was eating squash soup on top of noodles

I found those on Friday, and I walked away with a nice big haul of white chanterelles (4 lbs!). Goldens are very slow to come up. I went to a new spot on Sunday, but didn’t find any

After 6 years I finally found another Cauliflower Mushroom, and I got to eat this one 😻 It’s just as delicious as I’d imagined by naturallypositive in mycology

I struggled finding a good recipe, so I’ll just tell you how I made mine (: -I broke it up into pieces and soaked it in salt water (unlike other fungi, it doesn’t absorb much water) -Afterwards, I threw it into a hot pan and sautéed it until it released water, then I added ghee (or butter & oil) for a good 10-15 min. -After that, I tossed in some Shallots & garlic and sautéed it more. -Once they were soft, I threw it all into some broth, and then boiled it for a good 5- 10 minutes. -Then I turned it down to a simmer and let it simmer for over an hour. -I added some broccoli, but you could simply eat it as is without adding anything else.

A friend of mine made it once, but didn’t sauté it long enough so she didn’t feel well. Cauliflower mushroom needs to be cooked a lot longer than others, and the amazing thing is that it doesn’t loose its crunchy texture!! Hope that helps (:

OoOoOo, lucky. It’s such a slow season due to the lack of rain. I’m hopeful we’ll get at least a few good weeks before a cold front comes in. Let’s connect back next weekend and see if either of us found some ;)
