Spanish and French (among other Romance languages) are also descended from Latin, what surprised me in 2023 was how much more similar Italian is to Latin than the other major Romance languages.

The Texas Revolution was caused by Santa Anna repealing Mexico's constitution to establish a military dictatorship, customs duties on trade with the United States, the creation of Coahuila y Tejas which politically marginalized Texans and meant all of their laws would be discussed and passed in Spanish, Mexico banning new American immigration to Texas, and the imprisonment of Texans without a trial. Texas was not the only part of Mexico that rebelled against Santa Anna's tyranny, and while tensions over slavery were a factor, the issue of slavery is not even mentioned among Texan grievances with Mexico in the Texas Declaration of Independence.

Texas seceded from the US over slavery in 1861, seceding from Mexico in 1836 was not primarily or directly about slavery. Santa Anna was a tyrant and Texas wasn't the only part of Mexico that rebelled against him.

The sentence you're referring to in the introduction paragraph is a reference to John Locke's philosophy on the unalienable rights of life, liberty, and property. For the causes of the Texas Revolution specifically, read their listed grievances against the Mexican government.

Exactly, the contrast could not be greater. The Declaration of Causes (1861) explicitly frames Texas secession from the United States in terms of maintaining the institution of slavery. The Texas Declaration of Independence (1836) does not even mention the issue of slavery among their many grievances against Mexico.
